Theoretically, any time you can get to a dual-link DVI cable (eg. http://store.apple.com/us/product/MB571Z/A), you should be able to break it out further into two separate single-link DVI cables. As long as the individual monitors can be driven by a single-link DVI, you should be fine. AFAIK, that means about 1920x1080 (1080p equivalent) each.
