Does the bios consistently report 8GB? Incompatible memory can produce intermittent behavior.
Are you sure the video driver is honoring the 64MB setting in the bios? Perhaps it's claiming 2GB? Also, the kernel can be configured with various possible memory topologies--it may be possible that the ones on the live cd don't see it all.
