Have you changed the iTunes Library rescan interval? If not, each time iTunes Update makes a change in iTunes this will trigger SlimServer to rescan the library, which uses a lot of CPU time. Most people disable the automatic rescan (set interval to 0) and use the scheduled rescan plugin to set a daily rescan when SlimServer will not be in use.
