If you installed using the installer then it is best to use the uninstall option either from the menus or from the control panel - that keeps your Windows "add s/w" control panel consistent.
If you installed by unzipping or if there are files left are uninstalling - then delete the folder. Regarding stability - I think your problem has arisen because of 6.2.2 or perhaps when trying to find your sound problem settings were changed and left the configuration in an unusual state. The shoutcast issue is outside of slimserver control. I have found the when new release are made - some minor problems are found and so it is best to wait for a 1-2 weeks after a release announcement to let teething problems sorted. I think you installed 6.2.2 in the first few days of release.
