Weird!  I assume you've tried restarting SlimServer too right?

I still have a 6.3 / 4.06 installation on my laptop and I just tried
playing with it and changing the setting works as expected.    "Never"
is also the "default" setting so I'm not sure how it would have been
enabled either.

I'd try this...
Shut down slimserver.
Re-download a fresh copy of 4.06.
Open up SlimSever\server\slimserver.pref in your favorite text editor.
Search for plugin_screensaver_superdatetime
Delete all the lines that begin this way
Save file.
Restart slimserver.
Enter you zipcode/etc (Long weather forecasts should already be set to
"Never").
Press "+" on the remote to force a data refresh.
Cross fingers. :)
