I have come to this thread a bit late but I have a similar requirement.

For some time I have had a working Pi 3 that uses a USB sound card and
Liquidsoap/Icecast2 to generate a FLAC stream for LMS.

(Sorry I would have pointed you there earlier if I’d seen this)

I use it to stream from Vinyl but I’d also like it to record the output
to a local WAV file which I can achieve via Liquidsoap fairly easily but
I’d also like a means of gracefully shutting down the Pi after some
streaming / recording. Doing it manually will of course work but
forgetting would quickly result in some rather bulky WAV files somewhere
on the network / USB disk containing nothing but white noise from the
sound card.
