I'd suggest either using nohup (which will keep the process running after you log out), or tmux / GNU screen (which let you detach / re-attach your terminal session). In the latter case, set the log to debug, pipe the output to tee and grep for INFO, the you can easily have debug to a file and info to the screen without any fiddling with the code.
