Having an artwork grid as part of the normal list based menu system is
not something that i would consider doing. I just find it too jarring
for a UI to suddenly go from a text list to a grid of images.  I like my
UI's to be a bit more consistent.

However I do want to add the ability to switch to a different simplified
view mode that's base around an artwork grid.  I have that in my Android
app (here's a screenshot I grabbed from the play store, the actual app
has artwork where the placeholders are. I just can't have actual album
artwork in the Play store listing due to copyright violations)

The Windows UWP API makes it difficult to swap UI's on the fly, so I
haven't gotten around to figuring it out yet.

It already does on my machine.  I think it's determined by the server. 
What version of LMS are you using? I'm on 7.9.1
