I have thought about this some.  The downside to running multiple
instances of SLX is that each instance of SLX has the overhead of its
built-in browser, so running 5 instances would consume ~300MB of RAM.

different profiles for different instances and that, I think, would
complicate things more than I am willing to for normal users.

So what I would do is could come up with a way to provide the ability to
define and manage multiple instances of squeezelite ("additional
players"), but all within one instance of SLX.  That would save memory,
and I could probably do it in such a way that this extra feature would
not complicate things for "normal" users.  I think it would be some work
for sure, so thins would take a while to implement.

On the other hand and until then, if you are running multiple instances
of squeezelite seperately (via a batch file or whatever), SLX can still
control them all just like any other players on your network.  And if
you are competent enough to do that, then editing a batch file is
probably no big deal.

I can give it some more thought to the idea of an "additional players"
feature.
