Is there a minimum version of the server for this plug-in to work ? Or
some other pre-requisites ?

It certainly works best in 7.9. Some major features require at least 7.8.

On my "historical" SqueezeBox Server v7.6.2 on a Windows 7 VM, it
doesn't seem to work, whereas on an alternate test install of Logitech
Media Server 7.7.6 on an Synology NAS, it works (not for all entries,
even with "canonical" tagging as you put it, but on most of them)

I thought 7.7 was the minimum. But the repo file indeed seems to claim that 7.6 was good enough. Honestly I would be surprised if that was the case. 7.6 is so old... I'm not even sure I had started working on the Plugin when 7.6 was current.

 From the (debug level) logs, I see that for both of them chartlyrics
times out, but on the NAS, azlyrics gets a result, while on Win7 it gets
a "Redirection limit exceeded" error (same for genius).

This might actually be an issue with the Windows build: it comes with all Perl libraries included. Some of these, in particular SSL libraries, needed an update recently (past 12 months). Older builds, incl. older 7.9 builds, would fail many requests. This has nothing to do with the plugin itself, but really is a change in the environment, the internet.

On the other hand, on the NAS, if azlyrics doesn't found anything (404),
it seems genius is not called because od the following error :
Slim::Networking::IO::Select::__ANON__ (147) Error: Select task failed
calling Slim::Networking::Async::_async_read: Attempt to reload
Plugins/MusicArtistInfo/Lyrics/Genius.pm aborted.

Is there more context in the server.log?

Ideally on the Win7 VM because it has the "complete" set-up (with
MusicIP etc.), but I could very well update it to 7.7.6

There's little to no reason not to go straight to the latest 7.9.2 nightly. In particular if you want to use this plugin, as eg. artist artwork would not work with 7.7.x.

(I don't want to go "to far" in newer versions, because I make extensive
use of erland's plug-ins and their features are more important to me
than lyrics, although it would be a cool bonus)

I don't think those plugins are incompatible with 7.9.
