Ok, this was a lot simpler to fix than I anticipated.
In the AirPlay bridge settings, I have "Authorized ports" set to:
49152:21
The main difference between firewall settings for castbridge and airplay
bridge is that with airplay bridge, the "authorized ports" need to be
open for *both* tcp & udp.
Unlike others, I'm not finding that I need to open 5353, or 5000-5005,
6000-6005, 7000, & etc.
This is what my ufw lms app profile looks like now:

..and that seems to do it.
The ufw.log still shows some stuff being blocked, but that doesn't seem
to affect playback, as far as I've been able to tell.
