Because the pi0 uses the same single core armv6 processor. More than you need really depends on what you want out of your system. There is only one reason to use older pi models......if you need low power requirements if you want to run from a battery. (okay the cost of the pi0 is a reason) Otherwise, get the latest pi4. The pi4 is really getting all of the MFG time at their plants, and often due to supply and demand, the older pi3's can cost more. If you do go for a pi3xx, then go for the pi3b+ piCorePlayer a small player for the Raspberry Pi in RAM.
