You can't have the transcoding bitrate altering in real time according to the available bandwidth - ala the SlingBox if that's what you are after.
What you can do, however, is have a maximal bitrate set e.g. if you have a DSL uplink speed of 350kbps, I would set it to 192 kbps. This would provide enough overhead for the SSH tunnel as well. What you need to do to achieve this, is make sure that you have the LAME mp3 codec installed correctly in SlimServer. Then go to the player settings page, select the Audio tab, and then under bitrate settings, select the bitrate appropriate for your connection.
