Ok I realise what I have not been doing. The SC7 structure has changed.
I know you told us all, but this user didn't get it.....

Now repaired. Like this...

Used Adept Manager to remove slimserver. Downloaded the nightly  (5 Jan
2008) and discovered the new installation folder is
usr/share/squeezecenter. Used GDebi package installer to put in new
server. Saved beta 3 into squeezecenter folder. Unpacked the new
structure into folder (having opened squeezecenter as root) Opened the
plugin folder (as root) and changed the permissions and checked
mplayer.sh file is executable. Close this lot and save. Open services,
in admin mode and closed slimserver service and also unticked the open
at boot box. Restart the squeezecenter service. 

Cleared private data (just in case) and the damned thing works.
Yippee.

Thanks developers and those who have helped me. This is the dog's.

I hope the above is helpful for some people. If anyone thinks this post
is crap, I will change or remove as I don't want to make a mess of
things for folks at this nervous stage when SC7 is about to be let out
to everyone.
