Any server based solution will have one small problem, it's not going to work well on any box that's not the server. If you have a file on your desktop, and you want to play it off the server, well, not so easy. You'd first have to copy it to the server, and then tell the server to play it.
An interesting idea would be a streamer that you could put on your desktop. You'd open a file in the streamer app, it would tell Squeezecenter to start playing a stream that it would feed, and stream that file out through that stream. Of course, you'd have to write this for each major platform, at least some minor changes, but it could be interesting....
