Brian, this is a known issue, scrolling is a bit stubborn on that screen but it DOES work. I regularly use 5-6 Players plus 5-6 Servers (which show up below the players) myself.
It's an issue with the way Apple's scroll view/table view handles scrolling and will be fixed in iPeng 1.2 for iPhone OS3.0 (actually it's iPhone 3.0 fixing it but you need to adapt to that so it will have to wait for 1.2).
