I've learned that either the Touch nor the server web interface will display pictures if their names have spaces, hyphens or parentheses. The _ character in names does work.
I'm in the process of resizing a bunch of pictures to 480x272 to use my new Touch as a photo display when it is off, so I'm changing the names at the same time.
