I haven't tried this myself but I think it might work.

There is a third party applet called Custom Clock which supports the
Touch which you can configure to show any title format. You will need
the Custom Clock Helper to configure it. 

There is no possibility to modify the standard Now Playing screen due
to limitations in the Logitech part of the code, so you will have to
design a new one yourself. There are some samples that shows the
possibilities on this wiki page and there are also a number of bundled
styles which you can start with:

Unfortunately standard Squeezebox Server doesn't have a title format
for bitrate but fortunately MusicInfoSCR implement a title format
called KBPS.

So this is basically what you need to do:
1. Configure a new title format "KBPS" in SBS Settings/Interface
2. Configure KBPS as a title format to forward to the applet in SBS
Settings/Advanced/Custom Clock Helper/Various Settings/Title formats
3. Setup a custom style in Custom Clock Helper that contains a
"tracktext" item type which contains the text KBPS
4. On the Touch, configure the new Custom Clock custom style to be used
in one of the Custom Clock screen savers in
Settings/Screen/Screensavers/Custom Clock Settings
5. On the Touch, select the Custom Clock screen saver you have setup to
be used as the "When Playing" screen saver.

Theoretically, you can also inside the Custom Clock Settings menu on
the Touch select to completely replace the standard Now Playing screen.
However, I don't think you like to do this on the touch since the Custom
Clock applet doesn't support any touch button functionality so it would
mean that you loose the touch buttons in the Now Playing screen.

Note, it can get pretty advanced to configure a new style in Custom
Clock, so be prepare for some frustration and don't be afraid to ask
questions if there is something you don't understand. You might want to
start with something really simple that just displays the KBPS format
before you start doing the real style, just to make sure the KBPS title
format works as you like.
