I have to admit, I have no idea what the iPhone/iOS does to the audio.
As far as iPeng is concerned it doesn't do any conversions and throws
it at the iOS as it is, same sample rate, same word length and the iOS
API also does support that, at least up to 96 kbps (not sure about 192
and whether Squeezebox Server would not already down sample that).
But I don't know what Apples devices do with the data they get, whether
they down sample or not. Some of the Apple demos look like only 44.1
will actually be used but then why support higher sample rates
everywhere in the UI and then even if it only supports 44.1 it may just
be the DAC and that the digital outputs can do more.

In short: iPeng plays it as it is but I don't know what iOS makes of
it.
