i agree about programs that change things without your permission. This
is why I use mp3tag, foobar2000, and dbpoweramp, and don't even have WMP
installed on my computer (as it will do all sorts of nasty things even
if you tell it not to). But I'll also say that having good, complete
tags is very worthwhile. But classical music tagging is always a tough
area. Many good threads at these forums on classical tagging
issues/solutions.

Yes, you can do custom tags and use dynamic playlist to deal with that.
not sure exactly how, but should be easily doable.  You may need custom
scan or some other plugin from erland to make this work properly with
dynamic playlist. I use dynamic playlist and SQL playlist a lot to do
automatic random mixes from certain genres.
