You can't see that in scanner.log, automatic, incremental scans while
browsing folders go into server.log, not scanner.log. You can only see
it in the web interface in "Settings->Information".

iPeng caches Artwork, Albums, Albums sorted by Artist, Artists, Genres
and Playlists. It doesn't cache folders.

But there's something else here: your daily "clear & rescan". Is it
after that that iPeng doesn't work anymore?
Did you try the "fresh start from root folder" thing?
The reason I'm asking is that after a "clear & rescan", your whole
folder structure is invalid and yes, you can not play it then, it's no
longer there, you have to start getting a new folder structure from the
beginning. iPeng might not check for that when it sees that you have
rescanned the library, it might be difficult to do so, too, because each
browse action in the folder structure is a potential rescan.

What confuses me is that you say you can still browse up and down. Up
should still work (going up just closes a lower level menu) but you
should no longer be able to open another folder, that's weird. Maybe the
server still somehow keeps a copy of the old folder around?

Generally, doing a clear & rescan too often is not a good idea. The
server keeps a lot of internal caches, especially artwork thumbnails,
which will have to be re-created every day this way. This will slow down
your overall operation considerably.
And actually I especially don't understand it since you don't use the
tags anyway, don't you? When browsing by folder structure, the server
always rescans each folder anyway, so no need for a rescan, let alone a
clear&rescan.
