On the Classic a long press in the Now Playing screen should work in same way as it did in the previous version, doesn't this work ? What happens when you hold a number button in the Now Playing screen ? On the Touch, you need to use the "+" button on the remote or hold a while on the touch screen to open the context menu and then select the rating item in the context menu and change rating through it.
Unfortunately Logitech haven't made the Touch very configurable, so there isn't possible to make it show ratings in the Now Playing screen and the normal menus.
