Ok. That might have been the problem. When you install the server it
generates a UUID which is the unique identifier used to identify a
server (two servers can have the same name or - for remote access - the
same server could show up under different IP addresses)
The UUID is shown in settings and I think it's stored in server.prefs or
something like that.

If you just clone a VM you will end up with two servers which for iPeng
are the same machine and under certain circumstances this can cause
iPeng to keep switching between the two which is probably what you are
seeing.
iPeng does this to avoid problems with DHCP setups in which the server
keeps showing up under different IP addresses (still a quite common
setup for people running LMS e.g. On a laptop), you don't want to always
have to manually switch to the server.

Hardware Squeezeboxes might have similar issues because they, too, use
the UUID as the identifier for the same reason.
