Yeah, we need to make the sheer power of Plum layouts much more clear in the
docs.

Have you seen how you can host multiple layouts that users can choose, and
how you can also have multiple "intelligent" stylesheets that automatically
choose based on the exact type of browser?

You can build anything in the presentation layer you want using Plum.  I
encourage you to read the docs and tutorials regarding how layouts are
structured, how the intelligent stylesheets work, etc, and let us know what
you think of it all.
