That might be tough without major hacks to the custom tags. Why can't you just
indicate the order in the displayText?
<cf_DisplaySortOrderMenu>
<cf_DisplaySortOrderOption
displayText="Title,
Age and Name" sortOrder="Table.Title ASC, Table.Age ASC, Table.Name
ASC">
<cf_DisplaySortOrderOption
displayText="Name, Title and Age"
sortOrder="Table.Name ASC, Table.Title ASC, Table.Age ASC">
</cf_DisplaySortOrderMenu>
FWIW, I put in an ER for being able to sort by clicking on a column header.
