For the HTML print you can define the output via the 'print.xml' settings. I would recommended to not modify this file under config/common but place the modified file under your specific configuration dir (usually 'default') and define this path in the config xml => <pm_print_configfile> For PDF I was originally planning a similar template approach but the TCPDF library went out to be too annoying for this sort of work. So I dropped this idea for the time being.
