Hi Jorge How about also considering an optimiser like eAccelerator or Xcache (Wincache is only NTS) - an article here on performance - http://www.nexdot.net/blog/2010/02/09/wincache-apache-and-a-pretty-graph/.
I also found out via the mailing lists that if you are coloring up lots of classes over 1000's of rows (shapefiles for me) then preclassifying in the attributes so [1 = red, 2 = blue...] rather than on-the-fly logic in the mapfile like [if >1 and < 2 then red....] sped things up a treat!
