If it's a one time thing, you can sort in most any spreadsheet and then upload it, assuming you can export the table to a spreadsheet. 

However, sorting a pmwiki table in real time would be a nice feature. 

As far as that goes, having a spreadsheet recipe with sorting for basic tables would be a major pmwiki advance.
