I have over a dozen PmWiki sites running on a particular 1and1 Linux account ... rarely any problems. I've found that some recipes and external scripts seem to be happier on Linux than Windows, so unless there is a specific requirement to run a Windows server then my preference would be to stick with a LAMP configuration.

So, the question is, would you recommend to have a server based off of
Linux or Windows? I'm asking because the different environments would
 require different plugins and setups.

As a recipe writer, I have to say that I have ever only tested them on Linux (servers). This might be the case for other developers as well, but I don't really know. Patrick (Pm) probably tests on Windows, although I belive he uses a Linux server.
