I use IntelliJIDEA which indents and completes the ending tags automatically. It also validates and can theoretically complete tags given the DTD unfortunately there's a bug the handling of forrests DTD's.
As far as seeing the result I haven't found that to be a big deal because I let forrest worry about what it looks like. I only care if it's valid and just give it a once over after I'm done.
Forrest 0.4 _is_ slow as hell though. They apparently have made some improvements to the speed of the CVS version but seem to be pretty slow to release it. Ant uses the forrest skin but used Anakia to do the generation. I sometimes wonder if this would have been a better solution as Anakia's heaps faster. We would lose the PDF generation however.

When you guys write documentation do you write it in plain xml? Is there an easier way? Its driving me crazy. It takes me an hour to write a simple page of documentation. Then I can't see what its going to look like. I'm happy that we're using xml but there must be an easier way!
