I apologize for not informing you earlier that I am a complete POI newbie.
So your answer went sailing into the stratosphere ;)

The requirement is to create brand new excel workbooks (not modify existing
ones) with images (for logos).
One way is to read an existing excel file (serving as a template) and
populate only data cells and then persist the file with a new name.
I was wondering if there is a way to insert an image in a new workbook.

What is the Escher layer? Where can I find info on that?

I think in general actually images are just passed through and there's
no explicit manipulation.

Look also for the discussions about the Escher layer.
