I'd say there's a detailed HOW-TO at <http://jakarta.apache.org/poi/hpsf/how-to.html>. However, the POI web site has not yet been updated. You should checkout the current Subversion repository and generate your local version of the web site including that HOW-TO yourself. Do so by executing the command »ant docs«.
