The demos should still work in Chrome stable for me. No flags. There have been changes to the Shadow DOM CSS features that were recently updated in Canary (if you have the web platform features flag on). Most of the labs elements have been updated to reflect these changes ( https://github.com/PolymerLabs/polymer-ui-pages/blob/master/polymer-ui-pages.css) but the site hasn't been updated yet.
