Both poppler and okular are available on MacPorts where they build 64 bit by default on 64 bit platforms. MacPorts will automatically install all necessary dependencies and is currently using Qt 4.8.3.
To use MacPorts: Download and install MacPorts. See http://www.macports.org/install.php.
