wayland/niri: Rebuild against patched polling crate to fix crashes
Up until now niri would often crash with certain apps or under load.
I traced the issue to a bug in the kqueue backend of the rust
polling crate which is a transitive dependency of niri (niri -> smithay
-> calloop -> polling).

The workaround for now is backing out the faulty fd hash map change
in polling and build against this fork until a proper upstream fix
is found.
