remove aggressive pinning for importlib-metadata to be able to import new
versions.

I don't see anything in the way that litellm uses importlib-metadata
that could break with the looser pin. (Although they should just use
importlib.metadata from stdlib as it should be fine for all Python
versions they claim to support; it was added provisionally in 3.8,
and made non-provisional in 3.10).
