Are you sure about that? I'll even bet their website (http://www.transmissionbt.com/) has screenshots of Mac, GTK+, Qt, web client, etc. GUI's on the front page...
As for disabling files before the torrent even begins, I've never seen that. I just do it by hand after they start.
