The server versions of Postfix are from 2018, whereas the std. install is 2020.
You're off by a decade, 2.5.5 was released in 2008 and the final 2.5 release was in February 2012. This isn't the only time MacOS has carried an ancient version of some software and I highly recommend that you use a much newer version. Even if/when you install on a new mac there is a high probability that it won't come with an updated postfix.
