There is no need for doing that. Absent MIME headers, a message
must be 7bit US-ASCII text.

The downgrade from 8bit to 7bit **BODY** content is an MTA task.
It is a gateway transformation for messages that are in transit
between incompatible worlds.

This formatting of From: **HEADER** content is applicable only
when Postfix generates the From:  header for local submission with
/usr/sbin/sendmail.

If the From: header already exists, then it is left alone.
