I think I have posted description of what I did here some time ago.
(in one installation I use vrfydmn after postsrs to rewrite From: as well).

Generally, I created separate instance for outgoing mail, route all mail to that instance and rewrite sender in it. This way sender gets rewritten only for outgoing mail, only when address is not local.

This way, only outgoing mail gets processes in separate instance, and the only setting you need to move there is transport_maps.
