There is no obligation to implement every published RFC. Google do not
(yet) support DKIM with Ed25519, this is not particularly surprising,
adding support for this must not yet have been a sufficient priority.

In a robust implementation the RSA DKIM signature is sufficient. I
don't know whether Google's implementation is robust in that manner.
