Logging on Linux is
mostly done via journald today, and some big Linux distributions don't
even set the bit.
Postfix is not a Linux-only program. If you've examined the code, you
understand that.
Logging in Linux became less useful *by design* when systemd/journald
took over standard logging on Linux. That, helped along with weirdness
in macOS logging due to Apple replacing their log subsystem, is what
prompted the creation of postlog to allow Postfix to opt out of shabby
logging subsystems.
Mail logs may contain confidential information. Restricting write access
to a single reliable program and requiring a privileged account to read
them is important.
