Postfix doesn't create *any* addresses by default, that is your (the mail admins) job.

One of the first things I always do is alias root to my admin account, and when setting up a new domain (I do all mine as virtual domains in a mysql db), I create the (RFC required) abuse and postmaster aliases to the same admin account.
