that problem with Dovecot is solved. It was caused by missing (not sure why/how) the "include conf.d/*" line in dovecot.conf, so the ssl configuration simply was not loaded. Now with dovecot, if anybody is interested, I have this other question about how to configure permissions properly between dovecot and postfix:
