Hello, Why not use ST_Clip ? http://postgis.refractions.net/docs/RT_ST_Clip.html
Depending on what you are trying to do, you should also make a new raster based on a selection of tiles (from their rid by example or an st_intersects). You may also have a look to st_intersection.
