I've been able to load PostGIS layers on PostgreSQL 9.2 in ArcMap 10.1. That said I guess it depends what part of it you are using it for.
I guess if you use the st_geometry for some things you are stuck on 9.1. Are you running 32-bit or 64-bit and do you plan to upgrade to 2.1. The 9.1 64-bits We'll still be providing binaries for 2.1 though we don't plan to be pushing them to stackbuilder. It's the 32-bit 9.1 that is a real pain since those we need to manually build. I'm thinking that ESRI probably doesn't officially support PostGIS 2.1 either though I haven't had issue using it with PostGIS 2.1.
