That's it! I can't believe it... the thing is that I was using the 1 raster band version of ST_MapAlgebraExpr() for the first functions and with it the pixeltype goes first. When I went to use the 2 raster band version for the next functions, I didn't realize the change in the syntax.
Now it works perfectly.
