I normally do a "reply all" and then change the subject and remove all the
addresses but [email protected]
I should have done this before I started writing it...

I found the answer to my question.
I was mistaken that pound uses TLS. It is using SNI (Server Name Indication)
which is easily added to openssl with the option "-servername ${HOST}"
