Actually, it was only recently that I discovered that Entourage could automatically include highlighted text as citation in a reply. Before I would simply copy, then hit answer and paste as citation. Even if your mail program doesn't have this feature, putting a few "" or a > at the beginning will indicate the citation. I presume, however, that even PINE supports cut and paste.
