The easiest thing would be to buy one with built-in FireWire like the Pismo (the last of the PowerBook G3 series prior to the Titanium G4). Then you don't have to worry about keeping track of a PC Card or driver compatibility with OSX (like the Newer Technologies card which can be had cheaply but since the company is out of business there will be no more updates). The Pismo also support more memory and has USB. Also nice is that it can support an external monitor as an extended desktop (vs. mirroring like previous models). You may want to join the Lowe-End-Mac G-Book list to speak directly with those who are currently using the machines. Have you considered the new iBook (dual USB). It has all the capabilities of the PowerBook G3 Pismos plus it's smaller. Although you get a 12" screen vs. 14", it the same resolution at 1024x768.
